We love muffins around here.
We would eat them in a box.
We would eat them with a fox.
We would eat them in a house.
We would eat them with a mouse.
We would eat them here or there.
We would eat them anywhere!
Well, maybe not really with a mouse. I remember my own near death encounter with a real life rodent. *shudder*
Anyhow, we are a family that loves these tasty breakfast treats. Yesterday, I decided to earn some extra cool Mommy points by making these Chocolate M&M Yogurt Muffins for breakfast. It started out as a request from my oldest for chocolate chip muffins, but we were out of chocolate chips. Then she requested chocolate muffins and while pondering this, I remembered that I had a bag of Valentine's Day M&Ms that was mostly gone, but still sitting there in our candy bowl. Hmmm... I thought and off to the kitchen we went!
To make your own, gather up the following:
3/4 packed cup brown sugar
1/2 cup melted unsalted butter
1 cup vanilla yogurt
2 eggs
1 1/2 tsp vanilla
1 3/4 cup whole wheat flour
1/4 cup ground flax seed
1/4 cup oatmeal
1/3 cup unsweetened cocoa powder
1/2 tsp. salt
2 tsp baking powder
1 cup M&Ms
Psst...I also threw in one curly haired kitchen helper. ;)
In a large mixing bowl, combine the brown sugar, and melted butter.
Then add in the yogurt, eggs, and vanilla. Mix well.
In a separate bowl, mix the flour, cocoa, flax seed, oatmeal, baking powder, and salt.
Pour the dry ingredients into the wet ones and stir until well combined. Then pour in the M&Ms and stir until they are evenly distributed throughout the batter.
Scoop unto a greased muffin tin ( I don't have measurements here, I just typically put around the same amount in each cup. This probably why my muffins are never the same size. :P ) Bake at 350 for around 25 minutes.
These are not pretty, but then again I've never been good at making "pretty" food. It tastes GREAT though, and that's what counts around here!

The muffins had little pops of peek-a-boo M&Ms throughout.
Most of them on the inside melted slightly, giving you a surprise bite of extra chocolate in your bites. Mmmm....
