Banana Oatmeal Muffins

I have posted an oatmeal banana muffin recipe before, but since we've been slowly making changes in our diet over the past couple of years to make things more healthy, I thought it was high time to make some alterations to the recipe for this yummy breakfast treat.

The basics of the recipe are the same, just these are better for you. :)

So go in to you pantry and gather up:
  • 1 cup whole wheat  flour
  • 1/2 cup unbleached all purpose flour
  •  1 cup rolled oats
  • 1/2 cup honey
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup unsweetened applesauce
  • 1/2 teaspoon vanilla extract
  • 2-3 ripe bananas, mashed
  • Preheat your oven to 400 degrees and grease or line a muffin pan with paper liners.

    In a large bowl, combine all of your dry ingredients (flours, baking powder, baking soda, salt).  Mix well.

    Then in a separate bowl, mix the bananas, honey, egg, milk, applesauce, and vanilla.

    Pour the wet ingredients into the dry mixture and stir until combined.

    Fill the muffin cups in your tin to about 2/3 full and then bake for 18-20 minutes.

    Yum!
