Blackberry Banana Pancakes

Behind and beside our home is a good large wooded area where a HUGE and I do mean HUGE patch of wild blackberries grow. Every year, we go and forage as many as we can and most get eaten by little mouths before I can really make anything with them.  I have made a mixed berry syrup and muffins in the past, but nothing so intricate as a cobbler.

Yesterday morning, Aron came to me asking for pancakes for breakfast and I thought, "Why not use the blackberries?"

So I scoured the interwebs for a recipe, found one and then slightly modified it for our family. Want to make some yourself?

Gather up:

  • 1 1/3 cups unbleached all purpose flour
  • 2/3 cup whole wheat flour
  • 1 cup wheat germ
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs, beaten
  •  4 tablespoons honey
  • 1 1/3 cup milk
  • 4 bananas, mashed
  • 1 1/2 teaspoons vanilla 
  • 1 cup blackberries
First mix up all your dry ingredients.


In a separate bowl, mash the bananas,


and then add in the eggs, honey, vanilla, and milk.  Mix well.


Add the wet ingredients to the dry and mix until it is just incorporated.  Then dump in the berries and fold them in with your spoon gently.


Cook on a preheated griddle or pan in roughly 1/4 cup increments, flipping when bubbles form. Then all you have to do is grab some syrup and dig in!


Note: This makes a rather large batch.  I make big batches of pancakes and then freeze them for easy breakfasts later in the week.

  2. these look so good. I would not have thought to put the two fruits together but they look yummy! Can't wait to try the recipe!

  3. Yummy. Thanks for directing me to this recipe! I will definitely have to try these with my family, and I like that they have some wheat flour and wheat germ in them. Not all white flour.
